Poached Eggs Spreading
Your poached eggs are wispy and ragged because the whites are thin or the water was too turbulent. Strain and acidify for a tighter set.

- 1 crack the egg into a fine-mesh strainer to drain the watery whites
- 2 add 1 teaspoon vinegar to gently simmering water and create a slow swirl
- 3 slide the egg in and nudge the whites toward the yolk with a spoon for 30 seconds

Why this works
