Wine Sauce Too Acidic
An overly tart wine sauce needs dilution and balance. Add stock, round it with fat, and use a tiny amount of sweetness only if necessary.

The fix
Tap a step to check it off.
- 1 stir in 2 tablespoons unsalted stock at a time, tasting after each addition
- 2 whisk in 1 tablespoon butter or cream over low heat to round off the acidity
- 3 if the sauce is still sharply sour, add sugar or honey 1/4 teaspoon at a time
If it's still wrong
- Add more of the sauce's unsalted base, such as tomato, mushroom puree, or cooking juices.
- As a last resort, stir in a tiny pinch of baking soda and taste after the foaming stops; too much will taste soapy.
Prevent next time
- Use a dry, balanced wine rather than one that tastes sharply sour before cooking.
- Reduce the wine only until its raw aroma fades, then add stock before concentrating it further.
Notes
Balance acidity in stages
Start with stock because it corrects the concentration without making the sauce sweet. Add fat next, then reach for sugar only in tiny increments. Baking soda can neutralize acid, but it is a last resort because even a little too much can flatten the sauce and add a soapy taste.
