Vinaigrette Too Acidic

Your vinaigrette tastes sharp because the acid is too high. Add oil and a touch of sweetness.

Part of sauces cooking fixes .

sharp taste sour finish vegetarian gluten-free

Ingredients on hand

  • vinaigrette
  • olive oil
  • honey
  • mustard
  • salt

Why it happened

Acid dominates without enough fat. Oil and a little sweetness balance the flavor and soften the bite.

The fix

Save
  1. 1 whisk in 2 tablespoons olive oil
  2. 2 add 1/2 teaspoon honey to round the acid
  3. 3 add a pinch of salt and whisk smooth

If it's still wrong

  • use on hearty greens like kale
  • dilute with a spoon of yogurt

Prevent next time

  • start with a 3:1 oil to vinegar ratio
  • taste before adding more acid

Notes

Why this works

Oil coats the palate and reduces the sharpness of vinegar. A small amount of sweetness further softens acidity.

Substitutions

  • honey maple syrup
  • olive oil neutral oil
