Why it happened
Teriyaki is a reduced soy sauce. Dilution lowers salt concentration and sugar balances the harshness.
The fix
- 1 whisk in 1/4 cup water to dilute
- 2 add 1 teaspoon brown sugar to balance
- 3 simmer 1 minute with a small cornstarch slurry if it thins too much
If it's still wrong
- use as a glaze in small amounts
- serve with plain rice to spread the salt
Prevent next time
- start with low-sodium soy sauce
- reduce only to the desired thickness
