  2. 2 whisk in 2 tablespoons warm milk to smooth the surface
  3. 3 press plastic wrap directly onto the pudding and chill

  • Press plastic wrap onto the surface while warm.
  • Stir once or twice while cooling.

Why this works

The skin is simply a dried, over-set layer. Removing it and sealing the surface prevents evaporation, keeping the pudding smooth and creamy.
