Pie Filling Runny

Ingredients on hand

Why it happened
Fruit releases liquid as it cooks. If the starch does not reach a full boil, it never gels, so the filling stays loose.
The fix
- 1 scoop out the filling into a saucepan and simmer 3 to 5 minutes to reduce
- 2 whisk in 1 teaspoon cornstarch mixed with 1 tablespoon cold water and cook 1 minute
- 3 return filling to the crust and bake at 375F for 8 minutes to set
If it's still wrong
- Serve slices in bowls with a spoon and ice cream.
- Use the filling as a sauce over pancakes or yogurt.
Prevent next time
- Cook the filling on the stove until thick before baking.
- Let pie cool completely so the starch gels as it sets.

Why this works
