Pie Filling Runny

Your fruit pie is watery because the filling did not thicken enough. Reduce and rebake to concentrate the juices.

Part of baking cooking fixes and soggy food fixes .

runny filling soggy slice vegetarian

Ingredients on hand

  • baked pie
  • cornstarch
  • saucepan
  • lemon juice
  • oven

Why it happened

Fruit releases liquid as it cooks. If the starch does not reach a full boil, it never gels, so the filling stays loose.

The fix

Save
  1. 1 scoop out the filling into a saucepan and simmer 3 to 5 minutes to reduce
  2. 2 whisk in 1 teaspoon cornstarch mixed with 1 tablespoon cold water and cook 1 minute
  3. 3 return filling to the crust and bake at 375F for 8 minutes to set

If it's still wrong

  • Serve slices in bowls with a spoon and ice cream.
  • Use the filling as a sauce over pancakes or yogurt.

Prevent next time

  • Cook the filling on the stove until thick before baking.
  • Let pie cool completely so the starch gels as it sets.

Notes

Why this works

Reducing evaporates excess water and concentrates fruit sugars. Starch thickens only after reaching a full simmer, so cooking it briefly on the stove locks in a sliceable texture.

Substitutions

  • cornstarch tapioca starch
  • lemon juice orange juice
