The fix

- 2 dock with a fork and bake 5 minutes more
- 3 fill immediately so it does not re-puff

Why this works
Puffed crusts form when steam lifts the dough faster than it can set. Pressing and re-baking lets trapped steam escape and locks in a flatter shape.
