Pie Crust Puffed

Your pie crust puffed and blistered because steam got trapped under the dough. Press it down and re-bake to set it.

The fix

  1. 1 press the crust down gently while it is still warm
  2. 2 dock with a fork and bake 5 minutes more
  3. 3 fill immediately so it does not re-puff

If it's still wrong

  • crumble into a streusel topping
  • use as shards for a deconstructed pie

Prevent next time

  • dock the base before baking
  • use pie weights for the first half of the bake

Notes

Why this works

Puffed crusts form when steam lifts the dough faster than it can set. Pressing and re-baking lets trapped steam escape and locks in a flatter shape.
