Orzo Clumpy

Your orzo clumped because it sat or was under-stirred. Hot liquid and oil will separate it.

clumped pasta · sticky texture · vegetarian

The fix

Tap a step to check it off.

  1. 1 drizzle 2 tablespoons hot water over the orzo and stir to loosen
  2. 2 add 1 teaspoon olive oil or butter and toss to separate
  3. 3 finish with parsley and salt

If it's still wrong

  • Spread on a sheet pan and toast at 350F for 5 minutes.
  • Turn into a baked orzo casserole with sauce.

Prevent next time

  • Stir once or twice while cooking.
  • Toss with a little oil right after draining.

Notes

Why this works

Hot water dissolves surface starch and fat coats the grains, helping them slide apart instead of sticking together.
