Soggy Fried Rice

Your fried rice is wet because the rice was too fresh or the pan was crowded. Dry it and re-fry hot.

Ingredients on hand

  • cooked rice
  • skillet or wok
  • neutral oil
  • soy sauce
  • scallions

Why it happened

Fresh rice holds too much moisture. Drying and high heat drive off water and let the surface brown.

The fix

Save
  1. 1 spread rice on a sheet pan and dry at 300F for 6 minutes
  2. 2 re-fry in a hot pan with 1 tablespoon oil, spreading in a thin layer
  3. 3 add soy sauce at the end and toss with scallions

If it's still wrong

  • Turn into a rice bowl and top with crisp vegetables.
  • Bake in a casserole with cheese for a different texture.

Prevent next time

  • Use day-old rice that has dried in the fridge.
  • Cook in small batches to avoid steaming.

Notes

Why this works

Fried rice needs dry grains so the surface can brown. Drying the rice first and frying over high heat removes excess moisture and restores separate grains.
