Chocolate Bloom
Your chocolate looks white and dusty because it bloomed. It is safe to eat but needs re-melting for a smooth finish.

The fix
Tap a step to check it off.
- 1 melt the chocolate gently over a double boiler
- 2 cool and re-melt to proper tempering range
- 3 pour into a clean mold or use as a drizzle

- chop and use in baked goods
- mix into ganache where appearance does not matter

- store chocolate in a cool, dry place
- avoid temperature swings
