  1. 1 Slice off a piece and taste — if it's chewy but not hard, it needs MORE cooking, not less. Calamari has two tender windows: under 2 minutes and over 30 minutes
  2. 2 If slightly undercooked, continue in a hot pan with olive oil, garlic, and a splash of white wine for an additional 20–30 minutes until tender
  3. 3 If overcooked dry (from frying), serve with plenty of sauce — aioli, marinara, or chimichurri provide moisture that compensates for the tough texture
  4. 4 Slice into thinner rings — thinner slices chew faster and reduce perceived toughness

If it's still wrong

  • Transfer chewy fried calamari to a covered pan with a splash of white wine and simmer over medium-low heat for 25 minutes — braising reconverts it back to tender.
  • Use chewy calamari in a seafood rice dish (paella or seafood risotto) where it braises with the rice and re-tenderizes.

Prevent next time

  • Fry calamari at 375°F for exactly 60–90 seconds maximum and remove immediately — use a timer.
  • Score the squid rings with shallow cuts before coating — the scoring releases tension in the muscle during cooking.
