Cake Batter Curdled

Why it happened
Cold ingredients cause butter to seize and separate from the liquid. Gentle warmth and a little starch help rebuild the emulsion.
The fix
- 1 set the bowl over warm water and stir until it smooths out
- 2 sprinkle in 1 tablespoon flour and mix gently
- 3 if needed, add one egg yolk to re-emulsify
If it's still wrong
- bake as a loaf and cover with frosting
- turn into muffins where texture is less noticeable
Prevent next time
- use room-temperature butter and eggs
- add eggs one at a time and mix just until combined
