Cake Batter Curdled

Why it happened

Cold ingredients cause butter to seize and separate from the liquid. Gentle warmth and a little starch help rebuild the emulsion.

The fix

Save
  1. 1 set the bowl over warm water and stir until it smooths out
  2. 2 sprinkle in 1 tablespoon flour and mix gently
  3. 3 if needed, add one egg yolk to re-emulsify

If it's still wrong

  • bake as a loaf and cover with frosting
  • turn into muffins where texture is less noticeable

  • use room-temperature butter and eggs
  • add eggs one at a time and mix just until combined

Why this works

Batter is an emulsion of fat and water. When the fat is too cold, it separates. Warming gently and adding a little flour helps the fat and liquid bind again.
