Bread Loaf Collapsed

Your loaf sank after baking because it was underbaked or overproofed. Turn it into slices and toast to recover texture.

sunken loaf · dense center · vegetarian

The fix

Tap a step to check it off.

  1. 1 slice the loaf and toast at 325F for 8 minutes
  2. 2 brush with butter or olive oil for moisture
  3. 3 serve as toast, crostini, or croutons

If it's still wrong

  • turn into bread pudding
  • pulse into breadcrumbs

Prevent next time

  • bake to an internal temperature of 200F
  • avoid overproofing by watching the rise

Notes

Why this works

Collapsed loaves are usually under-set. Dry heat finishes the structure and creates a better chew, even if the original rise is lost.
